Vic and I met when his family moved to Hobbs, NM for his senior year of high school. "What a cutie" I thought and before we knew it, we were dating. A year and half later Vic went to Rio de Janeiro, Brazil for his mission and was gone for two years. I missed him terribly, waited impatiently, and before I knew it he was home. Nine days later he proposed and 3 months after that we were married in the Lubbock, Texas Temple. Now here we are with our little family and my how time flies.

Shrimp and Corn Chowder with Sun-Dried Tomatoes

Due to the suggestion from a friend I am posting the link to an absolutely AMAZING soup I made the other night. You can find the recipe here.
Because I'm a simple person, I also like my recipes to be. So when I made it, I actually left out the sun-dried tomatoes (cause I don't really see how they add a lot to it and I'm cheap) and the chives (not a big chive fan). I also like cheese (just ask my husband, I put cheese on/in EVERYTHING) and because I had leftover mozzarella I threw it in for good measure (everything evens out, see?!). :P Anyway, the recipe ended up being amazing and I definitely suggest it to anyone who is craving something warm on the cold night.

Hey Amanda! Your lil' one is getting SO big and cuter everyday! Send some of that snow this way to Arizona...LOL.
